So apparently my turntable doesn’t record in proper Stereo on Windows, but on Mac OSX the volume is too low

You probably need to buy a pre-amp. Sounds like your TT doesn’t have one built in. What TT do you own? Do you have a Stereo Receiver that you can plug it into first and then out to your computer? It can act as a pre-amp if it has a phono input.
Vinyl is lush. Omg. How have I lived without it?
